Dons' Oat Pancakes

Just came up with this recipe today.

Turns out pretty danged tasty.

I was eating them with out anything added after cooking, but I'm sure the addition of butter/jam/apple sauce/maple syrup, powdered sugar would make them even tastier.

Dons' Oat Pancakes
Concocted 6/29/2009

Makes 6 to 8 dollar pancakes.

Ingredients:
¾ cup quick-cooking oats
¼ cup rice flour
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon salt
1 egg or equivalent egg substitute
½ cup water or to desired consistancy
1 1/2 Tablespoons vegetable oil
½ teaspoon lemon juice


Directions:

Whisk all ingredients together and let sit 15 to 20 minutes.

Enjoy

If you look closely in my devious info(above) you'll see that art is not my only interest.
